Fish fillets such as tilapia, bass or bream
2 tbl Coconut oil
1tbl Lime juice
1/2 tsp Turmeric
1/2 tsp Chilli (chopped or flakes)
Couple of cloves of chopped Garlic
Mix all the ingredients together apart from the oil and the fish. Put the fish fillets in the marinade and rest for at least 20 minutes. Heat the coconut oil in a heavy based frying pan. Shallow fry the fish for a few minutes on each side. Timings will depend on the thickness of the fish fillets. Serve the fish with a good sprinkling of fresh coriander and you’re favourite saides such as rice, salad or new potatoes. It’s very good with a mango and frsh coriander salsa!
