I love something sweet and crunchy in the morning but find the amount of sugar in most granolas off putting. Even the “healthy” ones are crammed full of sugar and are far too sweet, and why do none of them contain healthy protein?
I noticed nutritionist Sameera Howard posting granola ideas so thought instead of scouring the shop shelves and complaining I’d make one using our lovely ingredients. It turned out really delicious!
3 TBL coconut oil
3 TBL cashew butter (Make your own or use a sugar free organic one such as Meridian)
25 grams raw cacao powder
30 grams lacuma powder
50 grams hemp protein (could use pea or rice but hemp is nice n nutty)
200 grams organic oats
100 grams mixed fruit and chopped nuts of your choice
Coconut palm sugar to taste – optional
Heat oven to 160c.
Melt the coconut oil in a heavy bottomed pan over a gentle heat. Take off the heat. Add the cashew butter and stir until combined. Add the cacao, hemp protein, oats and mixed fruit and nuts. put back on the heat and stir for a couple of minutes. Taste the granola – if you want it sweeter add some coconut palm sugar to taste.
Spread the mixture out on a large baking tray and bake for around 10 minutes. Take out of the oven and give the tray good shake before putting back in for a further 10 minutes.
Store in an airtight container or tin and enjoy with your favourite milk, sprinkled on yoghurt or added to fresh fruit.
*Make a chocolate free version by omitting the cacao and adding some cinnamon or vanilla powder.
