This organic, unfiltered cider vinegar mother is a symbiotic culture of bacteria and yeast (known as a SCOBY). This SCOBY gives the liquid its famous murky appearance!
All you need to do is to add apple cider to this SCOBY to create your own homemade, fermented vinegar that can be handed down the generations and can be used over and over again.
The vinegar is made by fermenting the sugar found in the apple cider – by adding the apple cider to the SCOBY, the bacteria turns the apple sugars into acetic acid, the main active ingredient in vinegar. The benefits of ingesting acetic acid include killing harmful bacteria or preventing it from further multiplication. Studies have shown this type of vinegar can lower blood sugar levels and improve insulin sensitivity, and it can help you eat fewer calories due to it making you feel fuller.
