Easy Peasy Peanut Butter Fudge
This “fudge” is made from a handful of gloriously healthy products. It’s super easy to make and is 100% raw. Free from dairy and refined sugars – the base of this delectable delight is coconut palm sugar and coconut oil, but like many recipes made using these ingredients it doesn’t taste coconuty, the coconut flavour is VERY subtle, it tastes like chocolate and peanut butter. Who knew vegan fudge could taste this good? Nom nom nom. Ingredients:

50g Coconut Oil
35g Raw Cacao
75g Peanut Butter – I used Whole Earth
1/4tsp Vanilla Powder or Vanilla paste
Method:
Whack all the ingredients in a food processor and leave it to run until everything is well blended.
Leave the mixture somewhere warm to rest for 20 minutes so the sugar dissolves.
Line a 1lb loaf tin with cling film.
Pour the mixture into the tin and chill in the fridge or freezer until set. Slice and enjoy.
The fudge must be kept chilled.
