Fermented Wild Garlic Salsa

Ingredients

  • Big bunch of wild garlic 
  • Big bunch of fresh coriander
  • 1 cucumber
  • Juice of 4 limes
  • 2 tsp salt to taste  (salt is important to lacto-fermentation process)
  • Bunch of green onions
  • Green chilis to taste

Method

  • Finely chop and mix all ingredient.
  • Roughly blend with stick blender to desired consistency.
  • Put the mixture into a kilner jar with a flip top lid or a fermenting crock.
  • Leave to ferment on the counter top for four days .
  • Then put in fridge . Keeps for a couple of weeks!
