Simple meals for when the kids won't eat their veggies.

We've all done it, worked away in the kitchen to provide a healthy meal for our family only to be greeted with "I don't like vegetables".

Wanda has created 2 simple and delicious recipes that will hide the veggies and get your family asking for more!

Red Sauce for pasta or pizza.

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 1 red bell pepper
  • 1/2 courgette
  • 1 celery stick
  • Handful fresh basil or parsley
  • 1 tin tomattoes
  • 1/2 tsp salt
  • 1 tbsp honey

Method

Blitz vegetables in a food processor on high until finely chopped.  Next add tomatoes, salt and honey.  Whiz again until well combined and transfers to a saucepan.  If you would like to make Bolognese add mincemeat or veggie mince now.  Heat slowly, gently stirring until thickened.

Veggie Mac and cheese

Ingredients

  • 1 clove of garlic
  • 1 stick of celery
  • 1 floret cauliflower
  • 1 sliced courgette
  • 2 pints of oat milk (or milk of your choice)
  • 80g butter
  • 50g flour
  • 1 tsp salt
  • 1 cup of cheese
  • 1 tsp mustard
  • Macaroni pasta

Method

Blitz together the vegetables and milk in your blender until smooth.  In a large saucepan melt the butter and stir in the flour.  Slow add the veggie milk mixture and continue to stir.  Keep stirring until the sauce has reached boiling point.  Finally add the salt, mustard and cheese.  This cheese sauce can be kept in the fridge or add to cooked macaroni and bake with extra cheese sprinkled on top.  Yum!
